IFFS Nutrition receives $20,000 Grant – Champions for Healthy Kids – through the Academy of Nutrition and Dietetics

This photo is from kids in a Cooking Matters for Kids class. The kids attend a local school sponsored by a church. The school is within walking distance from the garden space. Later this coming spring they will then learn to grow food through the Seed to Supper program. In this Cooking Matters for Kids class, kids learned how to be a whole grain detective by looking for the words “Whole Grain” as the first ingredient in a food label. Additionally, we incorporated a little science by demonstrating what happens to refined bread vs. whole grain bread when left soaking in orange juice, to simulate stomach acid. They all agreed that whole grains will keep you fuller longer since they don’t fall apart right away.  View what other RDs & DTRs are doing in the community to support healthy kids:  http://www.eatrightfoundation.org/Foundation/Slideshow.aspx?id=6442486691#1
